With its origins in the UK, 'rose veal' is the official name for meat from humanely raised calves.  'Rose' refers to the color of the meat which, because the pastured calves eat a natural combination of milk and grass, is pink. From the time the calves are weaned, until they are harvested at about 6-8 months, they live on pasture within a herd of cattle, sheep, and goats. It is a natural, humane way to raise the calves and as a result, the meat is healthier, more flavorful and higher in key nutrients than conventional veal. Throughout the evening, guests will learn about the various cuts of our Rose Veal from our skilled butcher, Karina Fengler. From primal to lesser cuts, Karina will explain and demonstrate how the animal is broken down in the butcher shop, focusing on the individual qualities of the cuts, and the best uses for cooking. As guests follow the butchery demonstration, the discussion will be linked to a delicious 6-course terroir-centric tasting menu. Chef Chase Gerstenbacher has created a menu that highlights the flavor of these premium proteins as well as the superior ingredients brought in by our produce farmers and our bakery. Gather with friends at one of our community tables and enjoy the flavors of this one-of-a-kind dinner.
